冷麺スープの作り方,白菜をよつわりにして一晩陰干しをして葉と茎に分けて塩漬けします1日から2日漬け米の磨ぎ汁を加え生姜、ニンニク青唐辛子を加え5日から7日味見をしながら仕上げたスープに味付けをして完成です約10日間ゆっくり時間かけて作ります。一度召し上がって下さい(^O^)

清香園中洲店の杏仁豆腐は原料からの手作りです。高砂キョウニンという漢方薬を一晩水に浸して粉砕して絞ります、牛乳や生クリーム、砂糖を加え火を通し冷凍庫で冷やして翌日出来上がり。まる2日間かけて作ります、是非御賞味下さいね。

今月は春の野菜を使って前菜を作りました。菜の花の水キムチ、蕾菜のマヨコチュソースなどなど、春の足音が聞こえて来ます。
